To obtain this coffee, after the coffee cherry harvest, the producer can choose 3 processes; for honey specialty coffees it will be semi washed. Through the semi-washing, carried out with mechanical means, the red part (peel) of the coffee cherry is removed, but the honey is left on the parchment coffee, drying, the more "honey" it has, the darker it will become. Parchments, if it is a middle ground, they will have a reddish appearance and if the amount of "honey" is very little, they will appear yellow.
